Bonda is similar to cutlet, it is a favorite snack among Keralites and are prepared regularly as part of tea time in every household.
Ingredients :
Four Beetroot
Three medium size potato
Oil to shallow fry – Sunflower oil also will suit
Fennel seeds (Perumjeerakam) – 3/4 tsp
Chopped Garlic and ginger – 1 1/2 tsp
Onion – 1 cup
Green chilly – 3
Turmeric powder – 1/4 tsp
Red chilly powder – 2 tsp
Coriander Powder – 1tsp
Gram masala Powder – 1tsp
Fenugreek seeds) – 1/4 tsp
Salt (as per taste )
Corn flour – 1tsp
Gram flour – 1 Cup
Prepare a batter by mixing Gram flour and corn flour with 1 cup of water, avoid lumps when mixing. Keep aside the batter for 5 minutes while you prepare the other part.
Boil whole potato and peel it, grate the beetroot. Sauté onion and garlic , add green chilly after the onion has turned brown. Add all the other ingredients and add beetroot grated and sauté till beetroot looks tender. Mash the boiled potatoes and add to mixture and sauté about 2 minutes. Make them into balls after the mixture cools. Do not add water as the balls might break while frying.
Heat the oil to medium hot and dip the balls in the batter and shallow fry. Be careful to turn the balls when the bottom part is done for each cutlet.
