Idiyappam is popular house hold Kerala traditional breakfast made from rice flour.
Ingredients for Idiyappam /nool puttu/ savai
Rice flour – 1 cup
Water – 2.5 cups
Salt – 1 table spoon
Coconut grated – 1 cup
Sugar – 3 table spoons
Method of preparation idiyappam
Roast the rice flour till it becomes crisp but the color should not become brown, keep mixing it to allow even roasting. Allow the roasted flour to cool down, boil 2.5 cups of water with 1 table spoon salt and add to the roasted rice. Knead with a spoon and form a dough, you could also use a dough maker. However it is not hard as bread dough and will easily blend. Leave the dough to rest till it cools down (for about 3 minutes). Fill the dough into a idiyappam press/maker or use a sieve and press the noodles directly into an idli steamer. You can use a ordinary steamer too that has multiple layers. Mix the sugar and coconut to sandwich between noodles. This is done by first squeezing out a single layer to the plate and then sprinkle the sweet coconut mix in between, then squeeze a second layer directly over the coconut. Let the idiyappam bake in steam for over 3 minutes each. Serve Idiyappam with stew or any curry.
