Malabar Spinach dal curry contains vitamins, protein and fiber it is a tasty curry and children will love it.
Malabar Spinach dal curry
Malabar spinach – 1 bunch
Dried red chillies – 3 (adjust as per your preference)
Toor Dal – 2 cups (yellow pigeon peas)
For seasoning: Oil – 2 spoon,
Urad dal – 1/2 spoon, (Vigna mungo, known as black gram too)
Mustard seeds – 1/4 spoon,
Asafoetida- 1 pinch
Curry leaves -few
Turmeric – 1 teaspoon
Red chilly powder – 1/2 teaspoon
Water – 2 cup
Salt to taste
Tamarind Pulp – 2 and half table spoon
Crushed garlic – 1table spoon
Crushed Ginger – table spoon
Clean the spinach thoroughly and chop them finely. Cook it with very little water and salt, drain well. Used the cooked spinach and grind well in mixer. Wash the Toor dal and pressure cook it with 2 cup water and 1/2 table spoon turmeric powder.
Use two table spoon oil and temper with mustard seeds, add the dried red chilly, curry leaves, urad dal and asafoetida and sauté them well in a pressure cooker. Add crushed ginger and garlic, then sauté it to remove raw smell, after that add turmeric and red chilly powder. Wait till garlic turns golden brown and we can add the tamarind pulp and spinach mix along with the 3 cups of hot water, close the pressure cooked dal and allow it to be cooked for 10 minutes. Taste the curry and add salt according to your taste after opening the pressure cooker. Children will love this curry along with rice or roti, it is a healthy mix of protein, fiber and vitamins.
