Jackfruit seeds are a great source of proteins and make very delicious side dish and and easy recipe.
Jackfruit seeds fry
Jackfruit seeds – (Hard skin peeled) Julian cut and steamed – 2 cups
Onion – Chopped 1 cup
Garlic cloves – 10 numbers
Black pepper powder- 1 teaspoon
Turmeric Powder- 1/2 teaspoon
Oil for seasoning-1 teaspoon
Mustard seeds – 1/4 table spoon
Dried red chilies(whole) – 2 numbers
Curry leaves – About 5 for tempering the oil
Salt as per taste
Cook the jackfruit seeds and drain the excess water and keep aside. Heat and temper oil with mustard , curry leaves and dried chilies in a pan. Add onions after the mustard begins to splutter, sauté till tender. Add garlic and sauté till onions turn golden brown. Add the cooked jackfruit seeds with a quarter spoon salt, black pepper powder, turmeric and keep sautéing till the seeds turn brown and remove from the stove and serve. Jackfruit seeds fry can be served along as side dish with boiled rice or chappathi. However jackfruit seeds fry are not suggested for gastric patients and may cause serious gastro issues if consumed more.
