Ladies finger fry is all season delicious vegetable side dish at Kerala and are nutritious too.
Ingredients for Ladies finger fry:
Ladies finger cut into 1 inch size – 2 cups
Small onions – cut into 4 each – 1/2 cup
Turmeric – 1/4 teaspoon
Sugar – 1/4 teaspoon
Lemon juice – 1/4 teaspoon
Garlic pods – 10
Oil – 1 table spoon
Mustard seeds,dry red chilly,Fennel seeds,salt, Curry leaves- as per taste
Preparation method of Ladies finger fry
Blanch the chopped ladies finger ( Don’t over cook them). Use a tick bottom pan (kadai), use about 3 table spoons oil and add mustard seeds – wait till it splutters and add curry leaves, dry chilly, fennel seeds, 1/4 spoon sugar, garlic and small onions and keep sautéing them well till small onions are dusky brown. Then add the blanched ladies finger to it and keep sautéing. Lower the flame and cover the pan with a lid ( do not let the lid be air tight) and occasionally sauté till ladies finger is crisp but not very dry, be careful not to let it stick to the bottom of the pan. Serve fry as a side dish to boiled rice or chapathi.
